Shukto or Shuktoni is a Bengali cook's most well-kept secret. A mix of fresh summer vegetables ranging from raw bananas to radish and of course, bitter gourd, lightly cooked in milk, this is a dish that's perfectly representative of the delicacy that characterises Bengali cuisine.
